I’ve always been a fondant kind of girl. I let Emily do her magic with buttercream and always hope people ask me for cakes covered in marshmallowy goodness. This cake was not one of those cakes. I may have even had nightmares about this cake. Emily was unavailable to do this cake so it was up to me to drive this cake fully stacked. I despise roads and all their bumps!

This technique is so gorgeous and I am actually really glad I was able to try it out. It took several hours to apply all of the icing since I had to make the color slowly fade as I went up. Something I learned after a 3-tiered wedding cake is to always use a masonite cake board for large cakes. I was so nervous carrying that wedding cake after I noticed the cardboard cake board giving in the middle, so never again! This 1st birthday cake also has a strong support system holding it up. When first starting out I had too many close calls using cake dowels, so now I just play it safe with larger cakes.

I am so sorry this cake caused you to have nightmares 🙁 I just wanted to let you know that it was everything I dreamed it to be!
